This Festive Bikini – A Recipe

WHere is an easy take on a drink found on the seasonal menu. This is a party-sized premix that is bursting with the flavours of a festive period, rendering it ideal for hosting a holiday party. Reserve the remaining cordial you can use for brunch beverages, sweets, or for more rounds of bikinis.

Bikini

Yields 10 people

To make the Citrus Syrup (makes 750ml)

300ml newly squeezed clementine juice
200ml newly squeezed lemon juice
500g caster sugar

For the Premix (produces 850ml, to serve 10)

400ml decent vodka
100ml dry gin
150ml peach-flavored liqueur
200ml citrus syrup (see above)
A few cranberries, for garnish
Mandarin essential oil, to finish

Directions

To prepare the Cordial: Put all the ingredients into a pot, bring to a simmer, mixing so the sugar melts. Then, remove from the heat and leave to reach room temperature fully. Decant to a sealable bottle, seal and store in the fridge, it will last for around one month.

To make Batch Mix: Combine all the spirits and syrup into a sizeable container, let it rest for an hour, then strain preferably using a fine cloth, making it completely strained.

For serving: Pour 85ml of your cocktail base to a mixing glass packed with ice, and agitate gently for about 60 seconds to cool it down. Strain into a frosted cocktail glass or a similar vessel, top with some cranberries and complete it by giving it a quick spritz of the essential oil over the top.
